Bacon Egg Cup

Earlier this year, I made Valentine's day breakfast for Boyfriend. The hit of the meal was a cup made of bacon with an egg nestled in the middle. It was easy, simple and delicious, using ingredients that are already in the house. Perfect with pancakes, waffles, fruit salad or French toast.

Bacon Egg Cup

6 strips of bacon
6 eggs
salt and pepper to taste
1/8 cup cilantro, chopped
1/4 cup shredded cheese, I used a Mexican blend

Preheat oven to 375 degrees. Spray nonstick spray in muffin tin cups. Line muffin cups with bacon strip, one in each cup. Bake in oven for 5-6 minutes til bacon is half cooked.


 Take muffin in out and crack an egg into each bacon ring. Top with salt and pepper. Evenly distribute cilantro and cheese into each cup.


Bake for 8-10 minutes. I baked mine for 8 minutes; the cheese was melted and the egg was still runny, just the way I like it.


It's like eating an egg that was fried in bacon fat. But it's a single serving and only one piece of bacon, so it's not as rich. The cilantro brightens it with freshness.
