Turkey Meatball Subs

This was a last minute meal decision, but boyfriend and I love turkey meatballs. We normally make turkey meatballs with pasta and marinara sauce. Today, we wanted to shake things up. 

Since this was such a quick fix, I forgot to take pictures of my process, but it's almost too easy, you won't need any pictures. Just the end result. 



Turkey Meatball Subs with Marinara sauce

1/2 cup italian style bread crumbs 
1/4 cup chopped parsley
2-3 cloves of garlic (2 cloves grated, 1 clove minced)
1/4 onion, grated

1 carrot, grated
2 tablespoons of dried minced onions
1 teaspoon chili powder (optional)
1 teaspoon salt, or to taste

1 teaspoon pepper, or to taste
1 pound ground turkey
Fresh basil
1 can ready tomato sauce
Hot dog/ Steak sandwich rolls
Pepper jack cheese

Preheat oven to 400 degrees. Combine egg, bread crumbs, parsley, grated garlic, grated onion, grated carrot, dried onions, chili powder, salt and pepper. Mix ingredients in a large bowl. Add turkey and incorporate with hands. I combine all the ingredients before the turkey so the meat doesn't get tough due to over mixing.

After ingredients are combined, roll turkey mixture into balls. Since I wanted a hearty sandwich, I made the meatballs a little smaller than golf balls. Spray cooking spray onto baking sheet and place meatballs onto sheet and place in oven.

Cook meatballs for 10-15 minutes on the first side. Flip meatballs onto other side and bake for another 5-10 minutes.

While meatballs are in the oven, simmer marinara sauce with minced garlic and roughly chopped fresh basil in a medium pot. Once the sauce has warmed through, and meatballs are finished in oven, place cooked meatballs in sauce so sauce coats meatballs. Simmer for another 4-5 minutes so sauce helps meatballs stay moist and incorporate flavors.

Open bread and place desired amount of cheese onto inside of bread, face open. Toast bread in oven or toaster oven until cheese is melted. Place whole fresh basil leaves onto cheese and spoon meatballs and sauce onto bread. Top with more cheese if desired.
