Corkscrew/ Fettuccine Alfredo

Boyfriend and I frequent a local wine shop called Corkscrew. They have a wide selection of wines along with a staff with a goofy sense of humor.

This date night at the Corkscrew's wine bar was long overdue. Boyfriend and I made a deal to purchase a bottle of port and a few glasses of wine if we both lost our fantasy football matchups in week 6, it's week 8.

My favorite turtleneck from H&M is as comfy as a t-shirt, but in a festive fall color. Along with a cotton mini from Forever 21 and a woven maroon belt, I feel like Rachel Berry from Glee.

Paired with the coziest scarf/ wrap from Old Navy and leather coat since it's about 30 degrees outside. A girl's gotta stay warm. To add some dimension, I added lace tights and black booties. Feelin' fancy!

Boyfriend and I splurged on a bottle of ruby port and a bourdeaux. Not to mention a glass of Ugly Duckling cabernet sauvignon and a cheese plate.

On tonight's menu, creamy, comforting, cheesy fettuccine alfredo with sauteed zucchini. Super easy, super quick and super delicious.


Quick Fettuccine Alfredo with Zucchini

1/2 lb fettuccine noodles
1/2 medium zucchini sliced and quartered
1 tsbp olive oil
1/2 cup butter
1/8 cup all purpose flour
1/4 tsp garlic salt
1 cup half and half
2 cloves garlic, minced
1 tsp dried parsley
1/4 cup grated parmesean
salt and pepper

In bring a pot of water to a rolling boil and add noodles with salt. In a saute pan over medium heat, add olive oil, zucchini, salt and pepper.

In a sauce pan over medium heat, melt butter. Whisk in flour and garlic salt until mixture is smooth. Whisk in half and half until fully incorporated. Stir in remaining ingredients and bring sauce to a simmer; about 4-5 minutes.

When zucchini is tender and pasta is al dente, add pasta to saute pan with zucchini, along with 2-3 tbsp of pasta water. Add sauce to pasta and zucchini and toss until zucchini and pasta is coated with sauce.
