Turkey Meatball Stuffed Shells/ Physical Revue 2012

Yesterday, I was completely invested in the idea of spaghetti and meatballs. Unfortunately we had no spaghetti in the house. What we did have was jumbo pasta shells. Time for some creativity. I used a different turkey meatball recipe than from Turkey Meatball Subs, and omitted the red pepper flake. I did miss the spice, but it's more friendly for those who don't eat spicy food.



Turkey Meatballs

1/2 tbsp Italian Herb seasoning
1/2 cup bread crumbs
1/2 tbsp onion flakes
1/4 tbsp garlic powder
1 egg
1/4 large onion, minced
1/2 green bell pepper, minced
1 lb ground turkey
salt and pepper

Pasta and sauce

1/2 12 oz box of jumbo shells pasta
1 tbsp garlic, minced
1 26 oz can tomato sauce, I used roasted garlic flavor
4 basil leaves, chiffonade
3 oz shredded cheese, I used pepperjack
3 oz shredded parmesean cheese


For meatballs, preheat oven to 400 degrees. Spray Baking sheet with non-stick spray. In a medium bowl, combine all ingredients and mix with hands until well incorporated. I add the turkey meat in last so all the other ingredients are well mixed before working the meat. Form turkey mixture into small balls, little smaller than golf balls. Place meatballs on baking sheet and cook for 10-15 minutes or until they start to turn golden brown. When done, remove from oven and cool.

While meatballs are cooking in oven, cook jumbo pasta shells in boiling, salted water until al dente. When shells are done cooking, remove from heat and drain and cool. In a medium sauce pan, add garlic, pasta sauce and basil leaves. Heat through so flavors meld together.

Preheat oven to 350 degrees. When meatballs and pasta have completely cooled, insert one meatball into each shell and place in a casserole dish. Repeat with remainder of meatballs and shells. When all of the stuffed shells are in casserole dish pour sauce over shells and top with all the grated cheeses. Place in 350 degree oven and heat up shells until cheese is melted.



While in the middle of preparing my Turkey Meatball Stuffed Shells, Boyfriend called and said we were going to the Physical Revue 2012, a department party thrown every semester. Every year the students and faculty of the Physics department come together for a sort of variety show, but mostly an excuse to get together, have some food and drinks and relax.

This year, Boyfriend and I decided to dress up, despite the normally casual environment. Since it is Winter, a sweater seemed appropriate. Perfect time for a family holiday picture in front of the tree.

I love this skirt, but rarely have a chance to use it. The volume and flounce of it reminds me of when I was a kid and my cousins and I had to execute "the twirl test" to see if our dress was pretty enough to wear.

At the PhysRev, the drinks were flowing, the food was devoured and the entertainment was exceptional. Lots of talent this year, including a faculty band, and lots of laughs. The party ended with a grand finale of students and faculty dancing to Psy's Oppa Gangnam Style.
