Beginning to look a lot like Christmas/ Roasted Chickpeas

In less than 2 weeks, it will be Christmas and our home reflects it. Boyfriend and his sister are very involved in Christmas decorating. Lights in almost every room. They did not decorate the bathroom like last year, yet. Ha! 









Since I still haven't made it to the grocery store, food posts have been at a minimum. But tonight, I wanted to make a pre-dinner snack. On the menu a salty, crunchy, flavorful, satisfying and healthy snack. Yes it's true. Think healthy bar nuts, but better.



Roasted Chickpeas

2 14.5 oz cans chickpeas, drained, rinsed and dried.
3 tbsp vegetable oil
1/2 tbsp garlic salt
1/2 tbsp cumin
1/2 tbsp onion powder
1/2 tsp cayenne pepper
salt and pepper

Preheat oven to 450 degrees. Place all ingredients onto a baking dish and evenly coat chickpeas with seasonings. Evenly distribute in one layer and roast in oven for 30-35 minutes. Easy, simple and delicious.

It's the perfect snack to told us over while watching Thursday night football.
