Mini Asparagus Manchego Frittatas

Still on a grocery shopping hiatus, supplies are running low. Sometimes I forget how difficult it is to cook without aromatics, mainly onions. This is my attempt at breakfast without onions and with whatever we have in the fridge.



Mini Asparagus Manchego Frittatas

3 large eggs
2 tbsp milk
1 tbsp olive oil
1 tbsp onion flakes, because I have no onions
1 tsp garlic, minced
1/2 bunch of asparagus, sliced on diagonal
Manchego cheese
salt and pepper

In a small bowl, whisk together eggs and milk. Preheat oven to 350 degrees. Spray a muffin tin with nonstick spray.

In a small saute pan over medium heat, add olive oil, asparagus, onion flakes (or real onion, minced), garlic, salt and pepper. Saute until asparagus turns bright green.

Evenly distribute the asparagus mixture into each muffin tin cup. Evenly distribute egg mixture into each muffin tin cup. Top each cup with a shredded Manchego cheese. Place in 350 degree oven for 10-15 minutes or until eggs are cooked and cheese is melted.

The frittatas will be small discs, perfect for snacks or appetizers. I think I had about three. Perfect little eggy bites. Enjoy.
