Minty Ice Cream Sundae

St Patrick's Day is coming up and I'm feeling green. The Chicago river will be dyed green, shamrock shakes are popping up at fast food restaurants and green beer will be served at college watering holes. In an effort to get into the spirit, I've been going crazy with the nail polish.



In addition to my St Patty's fever, Unofficial is right around the corner. Every year, the University of Illinois celebrates the faux Irish holiday with Unofficial St Patrick's day (aka Unofficial). St Paty's is an excuse for alcohol consumption, but doesn't always fall on optimal drinkings days, U of I has a huge party before St Patrick's day so the kids can gather 'round and drink after classes.

Boyfriend as occasionally participated in the festivities, but I normally work during this time. So to get us into the mood, Boyfriend and I made a concoction to get us minty fresh.


Minty Ice Cream Sundae

Vanilla ice cream or frozen yogurt
Creme de menthe
Thin Mint cookies
Mint sprigs (optional)

Scoop vanilla ice cream into bowl. Pour desired amount of creme de menthe on ice cream. Crumble one thin mint cookie over sundae and garnish with a sprig of mint.



Just in case anyone thought that it's almost Spring, you and that little furry prognosticator would be wrong. We just a had a Winter storm and as sad as it is to have a few more weeks on Winter, we had to take advantage.

Breaking out the snow pants

Evan invited Boyfriend and I to come over and build a snow castle. Using sand castle-building tools, we shoveled, scooped and packed bricks and build a beautiful structure.





 I left during the middle of construction, but it was awesome. Here's what all their hard work amounted to.
