My First 5k

About 6 months ago, I decided to try to live a more active lifestyle. I try to eat healthy, but eating well isn't always enough. I still felt tired and lazy and unmotivated. To be active and to choose to move was my new goal. 

I wanted to be more energetic, have more endurance, to challenge myself and reward myself with my new found strength. This meant less time being sedentary and more time moving. I wanted to hike and bike and swim and paddle: all things that would be difficult to in this part of the country during that time of year. But there was one thing I could do, run. 

I told myself that "running more" and "exercising frequently" was too ambiguous of a goal. No, to really make sure that I didn't stray, I needed something more tangible. I needed a number. So my New Years resolution was to run a 5k. I got a gym membership, enlisted my us and as my training partner and set my eyes on the Illinois marathon 5k event. 

I've lived here for almost 7 years and always viewed the annual race event as an inconvenience. A reason for everyone to run aimlessly while I try to dodge runners on my way to and from work. But now that I was one of those people, I had to prove myself worthy. I wasn't going to phone it in, I was going to run the whole thing. Rather than just participate and say that I completed the 5k, I was going to run it and run it to the best of my ability.

I trained regularly every week since January for this moment. When I first started, I could barely run a mile, let alone 5k straight. I pushed myself and did not lose faith and yesterday I completed my first 5k in 33 minutes, my personal best.

There were many motivators during the race, like the cheer of the bystanders, the perfect weather conditions, the flat land versus the inclines I trained on, etc. But I have to admit my main focus, and surprise motivator was a group of about a dozen marching band students, carrying sousaphones and running the 5k in my section. I refused to think that I trained for 5 months only to be bested by people that had 35 pounds of metal hanging over their backs. It's to them I give my unexpected thanks to help me shave an extra 5 minutes off of my normal total running time. You the real MVPs.








Anyway, my first race is completed and I can hang up my medal. It felt great and I would be lying if I said this would be my last. Thanks to hubby's dissertation writing schedule, painting, board games and running have become my new  favorite hobbies and passions.

My Favorite Bloody Mary

Ever since our trip to Baltimore I've been in love with Bloody Marys. Hubby actually bought me a ton of ingredients so I could do some recipe experimentation. I was happy to oblige. I've only made a few that fit my taste, but here is my favorite so far.


My Favorite Bloody Mary Recipe

1 5 oz can of V8 juice
1 tbsp worscestershire sauce
1 tbsp pickle juice
1 tbsp lemon juice
1/2 tbsp sriracha hot sauce
1 tsp celery salt
1 tsp black pepper
1 oz vodka
Celery stalk and other garnishes

In a shaker, combine all ingredients, except for garnishes. Shake until mixed. Wet the rim of the glass with lemon juice or water. Dip into spicy salt mixture. Add ice and pour cocktail into glass. Add garnishes on top using a skewer or toothpick.



Yes, that is a green smoothie next to my Bloody Mary. Yes this was my breakfast that Sunday morning. No I do not see anything wrong with that.

Apple Cinnamon Dutch Baby

I was watching an episode of Bob's Burgers, one of my favorite binge shows, when I came to the Dutch Baby episode. Everyone goes to diner that advertises their Dutch Baby, and despite it's long prep time and Bob's impatience, Linda orders the pancake.

I've never made or had a Dutch Baby, but the idea of a puffy silky pancake could convert this waffle-lover. Think of a custardy cake that is also crunchy and fluffy. How is this possible?! I can to find out.



Apple Cinnamon Dutch Baby
4 tbsp butter
2 granny Smith apples, sliced thinly
3 tbsp sugar, divided
3/4 cup all purpose flour
1/4 tsp baking powder
4 eggs
1 tsp vanilla extract
3/4 cup milk
2 tsp cinnamon


Preheat oven to 400 degrees. While the oven heats, dived butter in 4 pads and put into 12" skillet. Place skillet in oven for a minute to melt butter. Once butter is melted, remove from oven, don't forget your oven mits. Take apple slices and arrange in the skillet.

Meanwhile, in a medium bowl, whisk dry ingredients (flour, baking powder and 1 tbsp sugar). Then add wet ingredients (eggs, vanilla and milk). Whisk to combine. Once combined, pour over apples in skillet. Sprinkle with remaining sugar and cinnamon. Place back in oven and cook for 20-25 minutes.



We cut ours with a pie server and drizzled everything from maple syrup, to molasses, honey and chocolate syrup. All delicious.


I need to make this every weekend, and I mean EVERY weekend. So easy and delicious I cannot live without it. There will be many Dutch Babies in my future. Now, if you will excuse me, I need to find a Dutch Baby fan club.

Salmon Foil Packets

When Bryan and I were in college, I was still a novice at cooking. I had seen my fair share of cooking shows, but I still had fears of cooking. But in an effort to impress my then boyfriend, I decided to try out this whole cooking thing.

One of the first recipes I made for him was salmon foil packets. I recently recreated the dish I made from our first Valentine's Day. Fish, lemon and asparagus, just in time for spring. 


Salmon Foil Packets with Lemon and Asparagus
1 lb salmon filet, sliced into 3 filets
2 lemons, sliced into wheels
1 lb asparagus
2 tbsp olive oil
Salt and pepper


Lay aluminum foil on a flat surface. Spray foil with cooking oil. Lay one filet on foil. Add asparagus spears and lemon wheels and drizzle with olive oil and add salt and pepper. Wrap into a packet by lifting foil above salmon. Fold over top and fold over sides. Place in 350 degree oven for 10-15 minutes until salmon is cooked.

Thanksgiving in Sacramento

I'll be brief, not only because I'm about a month late on this post, but because I'm running out of time. Sometimes you just need weekend with your girls. I keep telling myself that I'm going to move out west to be closer to them, but life keeps getting in the way. But sometimes, life lets you remember what you're missing out on.


I flew to Sacramento on Thanksgiving day. I give thanks to all of my loved ones, including the ones that hosted me during my favorite holiday. There isn't much to document: a few laughs here, a could of stories there. But there is something about spending time with old friends that get you, that makes you realize how much you've been missing.

New Years in Chicago

It's the new year, 2016. So many things happened in 2015 that it's hard to keep them all straight. We changed jobs, lost loved ones, had many adventures and lots of eat. Our last moments of 2015 (and the first of 2016) were spent in the Lincoln Square district of Chicago with our good friends from U of I. Most of it was drinking and talking, but there were a few pictures too.

St Patrick's Day: Buttercream for Lucky Charm Cupcakes

Happy St Patrick's day! I didn't drink today, trying to be a responsible adult and limit my drinking. But it doesn't mean I can't have fun. Cupcakes anyone? 

The cake mix was okay, but the buttercream frosting came out amazing. Top with Lucky Charms cereal and we got a mini celebration. 

Buttercream Frosting:
1 cup softened butter, room temperature
1/4 tsp salt
1 tsp vanilla extract
5 tbsp heavy whipping cream
4 cups powdered sugar


In a stand mixer, of in a large bowl with a hand mixer, cream butter with vanilla extract and salt. Add whipping cream and mix slowly. Add powdered sugar in 8 parts while mixing. Whip until smooth. 

I scooped the frosting into a zip top bag and cut off one of the bottom corners. Makeshift piping bag! Pipe onto cupcakes and top with Lucky Charms cereal. Enjoy!
